It stands for light, natural cuisine and wholesome, vegetarian delights of certified organic quality. Only those who meet these standards receive the "Green Toque" in Austria. The Hahnenköpfle mountain restaurant on the Ifen mountain in Kleinwalsertal has just been awarded this coveted headgear, which stands for the highest quality. The seal is presented by the Austrian initiative Styria vitalis, which has now recognized a total of 38 establishments in eight federal states. The award is based on a strict catalog of criteria. These include, among other things, a comprehensive selection of seasonal salads, dishes made from whole grains with fresh, organically grown seasonal vegetables, meat dishes from certified organic livestock farming, local fish dishes, bread and pastries made from organic whole grains, and regional cheese specialties. A basic requirement is also that the respective establishment be certified organic by an independent inspection body. Restaurant manager Thomas Vorholzer and head chef Maik Neumann have overcome all these hurdles and many more with the Hahnenköpfle and, according to the citation, can now take their place in the "Olympus of healthy, award-winning cuisine." For years, the team has succeeded in bringing organic and mountain food, fast and healthy food, under one roof—well, under one roof. "Excellent cuisine is possible and in demand even in the mountains," emphasizes cable car director Augustin Kröll. "Thomas Vorholzer and his team have done an outstanding job." For some time now, the cable cars in Oberstdorf and Kleinwalsertal have been trying to put a special stamp on their restaurants. "Quality is a must," explains Kröll, "and every restaurant chef has the opportunity to excel in culinary arts."
